Introduction

Have you ever made a cake?

  • You mix all the ingredients together – flour, sugar, cocoa, eggs, milk, butter, and vanilla.
  • Pour it in a cake pan and put it in the oven.
  • After a little while, you no longer have the liquid you started with.
  • You have changed the physical properties of the liquid mixture and now you have a solid, delicious cake!

This is all due to the chemical interactions of the ingredients and the heat inside the oven.
